Try Using Success Decks: At the beginning of the semester, have students get a deck of index cards. At the end of each class, take a minute and ask them to write down a success they've had in class or in their every day life that day. By the end of the semester, they have a tangible take away of all their successes. You could also ask them to do a mid-course card feedback for you to gather information about how the course is going.
